The World Health Organization has compared the protein quality of quinoa to that of dehydrated whole milk. Of course, quinoa doesn’t have the saturated fat or cholesterol that whole milk has! If you wish to enjoy this task as well, then you should first prepare the chicken with veggies and quinoa recipe. This recipe calls for the following ingredients: chicken broth, rinsed quinoa, chopped garlic scapes, extra virgin olive oil, chopped onion, diced zucchini, diced tomato, skinless and boneless chicken breast, crumbled feta cheese, lime juice and fresh basil leaves.
The first thing that you need to do is to boil chicken broth and quinoa in a saucepan. Simmer it for about twenty minutes after boiling. You can then start to heat olive oil in a skillet. Cook garlic scapes and onions into it for approximately five minutes. Once done, chicken breast strips are added. Cook the chicken for five more minutes. Once the chicken meat is cooked, you should remove it from the skillet and set aside. Pour more oil into the skillet to start cooking tomato and zucchini for five to eight minutes. After that, the chicken meat should be returned into the skillet. Sprinkle the feta cheese, lime juice and basil leaves into it. Cook the mixture for another ten minutes. Serve it over hot quinoa.
